What you’ll need
For the shell:
• 1½ cups chocolate chips (melted)
For the filling:
• ½ cup pistachio cream (or finely blended pistachios + a little cream)
• 2 tbsp cream cheese
• 2 tbsp powdered sugar
For the crunch:
• ¼ cup crushed biscuits or wafer pieces
• 2 tbsp chopped pistachios
How it comes together
Melt the chocolate until smooth, then coat silicone molds or small cups to form a thin shell. Chill until set.
In a bowl, mix the pistachio cream, cream cheese, and powdered sugar until smooth.
Fold in the crushed biscuits and chopped pistachios for texture.
Fill each chocolate shell with the pistachio mixture, then seal with more melted chocolate.
Chill again until fully set.
