What you’ll need

• 1/2 cup unsalted butter, melted
• 1 cup granulated sugar
• 2 eggs
• 1 tsp vanilla extract
• 1/3 cup cocoa powder
• 1/2 cup all-purpose flour
• 1/4 tsp salt
• 1/4 tsp baking powder

For the buttercream center:

• 1/4 cup unsalted butter, softened
• 1 cup powdered sugar
• 1 tbsp heavy cream
• 1/2 tsp vanilla extract

For the caramel core:

• 1/2 cup soft caramel candies or thick caramel sauce

Optional topping:

• Extra caramel drizzle
• Chocolate drizzle

How it comes together

In a bowl, mix melted butter and sugar until smooth and glossy.

Add eggs and vanilla, whisking until thick and shiny.

Stir in cocoa powder, flour, salt, and baking powder until a rich brownie batter forms.

In a separate bowl, beat butter, powdered sugar, cream, and vanilla until fluffy and smooth.

Chill small scoops of buttercream for about 20 minutes so they firm up slightly.

Scoop a portion of brownie batter and flatten slightly.

Add a small dollop of buttercream and a bit of caramel in the center.

Wrap more brownie batter around it, sealing into a ball.

Place into a greased muffin tin or lined tray.

Bake at 350°F (175°C) for 14–18 minutes, until the outside is set but the inside stays soft.
