Ingredients
Yeast Mixture:
- 2 cups warm water (around 110°F)
- 2 tsp active dry yeast
- 1 tsp granulated sugar
Dough:
- ⅔ cup granulated sugar
- ¼ cup canola oil (plus more for greasing)
- 2 tbsp ube extract
- 2 tsp salt
- 6 cups all-purpose flour (plus extra for kneading)
Optional Fillings:
- 1 cup cheddar cheese (cubed)
- 1 cup ube jam (softened to room temperature)
Topping:
- ¼ cup bread crumbs
Instructions
- Prepare the Yeast Mixture:
In a small bowl, mix warm water, yeast, and sugar. Let it sit for 10 minutes until bubbly. - Make the Dough:
In a large bowl, combine sugar and oil. Add the yeast mixture, ube extract, and 1 cup of flour. Mix well. Gradually add the remaining flour, ½ cup at a time, until the dough comes together. - Knead the Dough:
Transfer the dough to a floured surface. Knead for 8-10 minutes until smooth and elastic. - Let the Dough Rise:
Place the dough in a greased bowl. Cover with a damp cloth and let it rise in a warm place for 2 hours, or until doubled in size. - Shape and Fill:
Divide the dough into 32 pieces. Flatten each piece, add a cube of cheese or a dollop of ube jam, then seal and shape into ovals. Place on a greased baking tray. - Second Rise:
Cover the shaped dough and let it rise for another hour. - Bake:
Preheat the oven to 375°F. Sprinkle bread crumbs on top of the pandesal. Bake for 15-20 minutes, or until golden brown. Serve:
Let cool slightly, then enjoy warm!

- Extra Ube Flavor: Add 1 tbsp ube powder to the dough for a deeper color and flavor.
