  • Total Time: 3 hours (including rising time)
  • Yield: 32 pieces 1x

Ingredients

Scale

Yeast Mixture:

  • 2 cups warm water (around 110°F)
  • 2 tsp active dry yeast
  • 1 tsp granulated sugar

Dough:

  • ⅔ cup granulated sugar
  • ¼ cup canola oil (plus more for greasing)
  • 2 tbsp ube extract
  • 2 tsp salt
  • 6 cups all-purpose flour (plus extra for kneading)

Optional Fillings:

  • 1 cup cheddar cheese (cubed)
  • 1 cup ube jam (softened to room temperature)

Topping:

  • ¼ cup bread crumbs

Instructions

  1. Prepare the Yeast Mixture:
In a small bowl, mix warm water, yeast, and sugar. Let it sit for 10 minutes until bubbly.
  2. Make the Dough:
In a large bowl, combine sugar and oil. Add the yeast mixture, ube extract, and 1 cup of flour. Mix well. Gradually add the remaining flour, ½ cup at a time, until the dough comes together.
  3. Knead the Dough:
Transfer the dough to a floured surface. Knead for 8-10 minutes until smooth and elastic.
  4. Let the Dough Rise:
Place the dough in a greased bowl. Cover with a damp cloth and let it rise in a warm place for 2 hours, or until doubled in size.
  5. Shape and Fill:
Divide the dough into 32 pieces. Flatten each piece, add a cube of cheese or a dollop of ube jam, then seal and shape into ovals. Place on a greased baking tray.
  6. Second Rise:
Cover the shaped dough and let it rise for another hour.
  7. Bake:
Preheat the oven to 375°F. Sprinkle bread crumbs on top of the pandesal. Bake for 15-20 minutes, or until golden brown.
  8. Serve:
Let cool slightly, then enjoy warm!

Notes

  • Fresh Yeast: Always check the expiration date on your yeast for best results.
  • Extra Ube Flavor: Add 1 tbsp ube powder to the dough for a deeper color and flavor.
  • Make Ahead: Prepare the dough the night before and let it rise in the fridge overnight.
  • Storage: Store leftovers in an airtight container. Reheat in the oven for 5 minutes to restore freshness.
