Ingredients
For the Salad:
- 1 head Romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced into rounds
- ½ cup Kalamata olives, pitted
- ½ cup feta cheese, crumbled
- ¼ red onion, thinly sliced
For the Dressing:
- ¼ cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and black pepper, to taste
Optional Add-Ons:
- Grilled chicken, shrimp, or chickpeas for protein
- Roasted red peppers or artichoke hearts for extra flavor
- Avocado slices for creaminess
- Red chili flakes or jalapeños for heat
Instructions
- Prepare the Lettuce: Wash and thoroughly dry the Romaine lettuce. Chop into bite-sized pieces and place in a large mixing bowl.
- Slice the Vegetables: Halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Add them to the bowl.
- Add the Briny & Creamy Ingredients: Toss in the Kalamata olives and crumbled feta cheese.
- Make the Dressing: In a small bowl or mason jar, whisk together the olive oil, red wine vinegar, minced garlic, and dried oregano. Season with salt and pepper to taste.
- Toss & Serve: Drizzle the dressing over the salad and toss gently to combine. Serve immediately and enjoy!

- For extra crunch, chill the veggies before assembling the salad.
- Toasting the feta lightly in a pan adds a delicious warm caramelized flavor.
