How to Make Strawberry Coconut Cream Bars

Line an 8×8-inch baking dish with parchment paper.

Mix the crushed cookies, melted butter, and sugar until evenly combined. Press the mixture firmly into the bottom of the pan to create an even crust.

Place the crust in the refrigerator while preparing the filling.

In a mixing bowl, beat the cream cheese until completely smooth.

Add the powdered sugar, vanilla, coconut extract, and coconut cream. Continue mixing until light and creamy.

Gently fold in the whipped topping.

Spread the coconut filling evenly over the chilled crust.

For the strawberry layer, cook the strawberries, sugar, and lemon juice over medium heat until they begin to soften. Stir in the cornstarch mixture and cook until thickened.

Allow the strawberry mixture to cool completely before spreading it gently over the coconut layer.

Cover and refrigerate for at least 6 hours, or overnight for the cleanest slices.

Before serving, garnish with fresh strawberries and toasted coconut.

A Little Note From My Kitchen

These bars have become one of my favorite warm-weather desserts because they always look beautiful with very little effort.

Sometimes I decorate the top with extra strawberry slices arranged like flower petals, while other times I drizzle a little melted white chocolate over everything for an extra special finish.

No matter how I serve them, they’re always one of the first desserts to disappear.
