Instructions
Step 1: Prep the Chicken
- Pat the chicken dry with paper towels.
- Season both sides with salt, pepper, garlic powder, and half the Italian seasoning.
Step 2: Sear the Chicken
- Heat 2 tablespoons of butter in a skillet over medium-high heat.
- Sear the chicken skin-side down for 5 minutes. Flip and sear the other side for 3 minutes. Remove and set aside.
Step 3: Cook the Sweet Potatoes
- In the same skillet, add the remaining butter and honey.
- Toss in sweet potatoes, cranberries, pecans, and the rest of the Italian seasoning. Stir to coat evenly.
Step 4: Roast Everything Together
- Place the seared chicken on top of the sweet potato mixture.
- Transfer the skillet to a preheated oven at 400°F. Roast for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
Step 5: Garnish and Serve
- Sprinkle fresh thyme over the dish.
- Let it cool for a few minutes, then serve straight from the skillet.
