Ingredients
- 1 cup rolled oats
- 1/2 cup pistachio butter (unsweetened or lightly sweetened)
- 2 tbsp honey or maple syrup
- 1/4 cup mini dark chocolate chips
- 1/4 tsp Himalayan pink salt, plus more for topping
Instructions
In a medium bowl, combine the oats, pistachio butter, honey or maple syrup, chocolate chips, and pink salt.
Mix everything together until well incorporated and a soft dough forms.
Roll into 12 small balls using your hands or a cookie scoop.
Place them on a parchment-lined tray and refrigerate for at least 30 minutes.
Before serving, lightly sprinkle each bite with a pinch of pink salt for a flavor pop.
Notes
