Pistachio Butter & Pink Salt Energy Bites (No-Bake & Naturally Sweet)

Easy no-bake snack bites with pistachio butter, dark chocolate chips, and pink salt. Sweet, salty, protein-packed & addictively good.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup pistachio butter (unsweetened or lightly sweetened)
  • 2 tbsp honey or maple syrup
  • 1/4 cup mini dark chocolate chips
  • 1/4 tsp Himalayan pink salt, plus more for topping

Instructions

  1. In a medium bowl, combine the oats, pistachio butter, honey or maple syrup, chocolate chips, and pink salt.

  2. Mix everything together until well incorporated and a soft dough forms.

  3. Roll into 12 small balls using your hands or a cookie scoop.

  4. Place them on a parchment-lined tray and refrigerate for at least 30 minutes.

  5. Before serving, lightly sprinkle each bite with a pinch of pink salt for a flavor pop.

Notes

For an extra boost of texture, roll the bites in crushed pistachios before chilling. These keep well in the fridge for up to 5 days in an airtight container—perfect for busy weeks!
