Ingredients
Dry Ingredients:
- 1 ¾ cups (220g) all-purpose flour
- ½ cup (45g) Dutch-processed cocoa powder
- ¾ cup (150g) granulated sugar
- ¼ cup (50g) light brown sugar, packed
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp instant coffee (optional, enhances chocolate flavor)
Wet Ingredients:
- 2 large eggs
- ½ cup (120ml) vegetable oil
- ¾ cup (180g) sour cream (or full-fat Greek yogurt)
- ½ cup (120ml) boiling water
Chocolate Add-ins:
- ¾ cup (130g) dark chocolate chunks
- ¾ cup (130g) milk chocolate chunks
Instructions
1️⃣ Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
2️⃣ Mix the dry ingredients: In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and instant coffee.
3️⃣ Mix the wet ingredients: In another bowl, whisk the eggs, oil, sour cream, and both sugars until smooth.
4️⃣ Combine wet and dry ingredients: Gradually fold the dry mixture into the wet mixture, stirring gently until just combined (do not overmix).
5️⃣ Fold in the chocolate chunks: Gently stir in both dark and milk chocolate chunks.
6️⃣ Fill the muffin tin: Scoop batter into the lined muffin tin, filling each cup about ¾ full.
7️⃣ Bake for 18-20 minutes, or until a toothpick inserted into a muffin comes out with a few moist crumbs and melted chocolate.
