14 ounces puff pastry (homemade or thawed from frozen)

1 large egg (for egg wash)

For the Mushroom Duxelles:

2 tablespoons unsalted butter

16 ounces cremini mushrooms, finely chopped

1 large shallot, finely diced

Pinch of kosher salt

1 ½ teaspoons fresh thyme leaves

½ cup low-sodium chicken broth

Instructions

  1. Prepare the Beef:
    • Season the tenderloin with salt and pepper.
    • Sear in hot grapeseed oil until all sides are browned. Let it cool completely.
  2. Make the Mushroom Duxelles:
    • Melt butter in a pan and sauté mushrooms and shallots.
    • Add salt, thyme, and chicken broth. Cook until thick and spreadable. Let it cool.
  3. Wrap the Beef:
    • Spread Dijon mustard over the cooled beef.
    • Wrap it in deli slices, then spread the mushroom duxelles over the meat.
  4. Assemble with Puff Pastry:
    • Roll out puff pastry and cut into portions.
    • Place the beef in the center of each piece, wrap, and seal the edges.
  5. Bake:
    • Brush each Wellington with egg wash.
    • Bake at 400°F (200°C) for 20–25 minutes, or until golden and flaky.
