What you’ll need

For the pancake batter:

• 1 cup all-purpose flour
• 1 tbsp sugar
• 1 tsp baking powder
• 1 egg
• ¾ cup milk
• 2 tbsp melted butter
• Zest of 1 lemon

For the lemon center:

• ½ cup lemon curd
• 2 tbsp whipped cream or cream cheese

How it comes together

In a bowl, mix the flour, sugar, and baking powder.

Add the egg, milk, melted butter, and lemon zest, then whisk until smooth.

In another bowl, mix the lemon curd with whipped cream or cream cheese until creamy.

Cook the batter in a waffle cube maker or small pan until lightly golden.

Cut into cubes if needed, then gently open or inject the lemon filling into the center.

Warm slightly before serving for the best texture.
