What you’ll need
• 1 cup all-purpose flour
• 1 tsp baking powder
• 2 tbsp sugar
• 1 egg
• ¾ cup milk
• 2 tbsp melted butter
For the cream filling:
• ½ cup heavy whipping cream
• 2 tbsp honey
• ¼ tsp almond extract
For topping:
• 3–4 tbsp honey
• ⅓ cup sliced almonds
How it comes together
In a bowl, mix the flour, baking powder, and sugar.
Add the egg, milk, and melted butter, then whisk until smooth and slightly thick.
Heat a pan over medium heat and cook small pancakes until lightly golden.
In another bowl, whip the cream with honey and almond extract until soft and airy.
Take two pancakes, spread the cream between them, and gently press to form soft pillow sandwiches.
Finish with a warm drizzle of honey and a sprinkle of sliced almonds.
The best part
Break one open while it’s still slightly warm.
The cream inside softens just enough with the honey, creating a smooth, delicate filling that melts into the pancake.
