There’s something about a cold dessert on a warm day that just hits differently.
And these do it perfectly.
Cool, creamy bars filled with bursts of juicy berries, all wrapped in a crisp chocolate shell that cracks with every bite. Smooth inside, slightly fruity, and finished with that satisfying snap on top.

What you’ll need
For the base:
• 1½ cups crushed graham crackers
• 4 tbsp melted butter
For the cream layer:
• 1 cup heavy whipping cream
• 3 tbsp powdered sugar
• ½ tsp vanilla extract
For the berry layer:
• 1 cup mixed berries (strawberries, blueberries, raspberries)
For the chocolate shell:
• 1½ cups chocolate chips (melted)
• 1 tbsp coconut oil (optional, for smooth cracking)
How it comes together
Mix the crushed graham crackers with melted butter and press into a lined pan to form the base.
In a bowl, whip the heavy cream with powdered sugar and vanilla until soft and fluffy.
Spread the whipped cream over the base, then scatter the berries evenly on top.
Freeze for at least 3–4 hours until firm.
Once frozen, pour melted chocolate over the top and spread quickly into a thin layer.
Let it set, then cut into bars.
The best part
Take a bite straight from the freezer.
The chocolate shell cracks instantly, while the creamy frozen layer and juicy berries melt together into a smooth, refreshing bite.
