- 1 teaspoon ground ginger (or 1 ½ tablespoons grated fresh ginger)
- 1 (16 oz.) bag coleslaw mix
- ½ cup grated or matchstick carrots
- 2 green onions, thinly sliced
- Kosher salt and ground black pepper, to taste
Instructions
- Cook the Protein – Heat a large skillet over medium heat. Add ground turkey or chicken and cook until browned, breaking it into crumbles.
- Add Aromatics – Stir in diced onion, garlic, and ginger. Cook until fragrant and onion softens.
- Mix the Sauce – In a small bowl, combine sesame oil, rice vinegar, soy sauce, and hoisin sauce. Stir well.
- Add Vegetables – Toss in coleslaw mix and grated carrots. Stir-fry until the veggies begin to soften.
- Pour the Sauce – Drizzle the sauce over the mixture and stir to combine. Cook for an additional 2-3 minutes.
- Garnish & Serve – Top with sliced green onions, season with salt and pepper to taste, and serve hot.
