- 1/2 cup Italian Breadcrumbs
- 1 Egg
- 1/4 cup Onion (chopped)
- 1 tsp Garlic (minced)
- Salt & Pepper to taste
Topping Ingredients
- 1/4 cup Ketchup
- 2 tbsp Brown Sugar
- 1 tsp Mustard
- 1/2 tsp Worcestershire Sauce
Instructions
- Preheat oven to 350°F (175°C).
- Combine all ingredients (except topping) in a large bowl. Mix gently to avoid overworking the meat.
- Grease a 12-cup muffin tin or line with paper cups.
- Fill each muffin cup ¾ full with the meat mixture.
- In a small bowl, mix the topping ingredients together.
- Spoon the topping over the meatloaf muffins.
- Bake for 20-25 minutes, or until golden brown and cooked through. Check that the internal temperature reaches 160°F for beef or 165°F for turkey.
- Let the muffins rest for 5 minutes before serving.
Notes
- You can make these muffins ahead of time and refrigerate or freeze them for later use.
- For a leaner version, substitute ground turkey for beef.
- Add finely chopped veggies like carrots or zucchini for a hidden veggie boost.
- To make the muffins cheesy, mix shredded cheddar or mozzarella inside.
