  • Yield: 12 servings 1x

Ingredients

Scale

Ingredients

  • 1 lb Ground Beef
  • 1/2 cup Italian Breadcrumbs
  • 1 Egg
  • 1/4 cup Onion (chopped)
  • 1 tsp Garlic (minced)
  • Salt & Pepper to taste

Topping Ingredients

  • 1/4 cup Ketchup
  • 2 tbsp Brown Sugar
  • 1 tsp Mustard
  • 1/2 tsp Worcestershire Sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine all ingredients (except topping) in a large bowl. Mix gently to avoid overworking the meat.
  3. Grease a 12-cup muffin tin or line with paper cups.
  4. Fill each muffin cup ¾ full with the meat mixture.
  5. In a small bowl, mix the topping ingredients together.
  6. Spoon the topping over the meatloaf muffins.
  7. Bake for 20-25 minutes, or until golden brown and cooked through. Check that the internal temperature reaches 160°F for beef or 165°F for turkey.
  8. Let the muffins rest for 5 minutes before serving.

Notes

  • You can make these muffins ahead of time and refrigerate or freeze them for later use.
  • For a leaner version, substitute ground turkey for beef.
  • Add finely chopped veggies like carrots or zucchini for a hidden veggie boost.
  • To make the muffins cheesy, mix shredded cheddar or mozzarella inside.
  • Make sure to use a meat thermometer to check the doneness.
  • Let the muffins rest before serving to ensure they remain juicy and tender.
