  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) crushed tomatoes
  • 4 cups low-sodium vegetable broth
  • Parmesan rind (optional)
  • 1 tbsp red wine vinegar
  • 1/2 tsp granulated sugar
  • Grated Parmesan, for serving
  • Chopped fresh parsley, for garnish

Instructions

  1. Sauté the vegetables: Heat olive oil in a skillet over medium heat. Add onions, carrots, and celery. Sauté until softened.
  2. Add seasonings: Stir in Italian seasoning, salt, smoked paprika, black pepper, and minced garlic. Cook until fragrant.
  3. Combine ingredients in crockpot: Transfer sautéed veggies to the crockpot. Add lentils, diced tomatoes, crushed tomatoes, and vegetable broth. If using, drop in the Parmesan rind.
  4. Cook: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until lentils are tender.
  5. Finish the soup: Stir in red wine vinegar and sugar before serving to balance flavors.
