- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup cream cheese, softened
- 1/4 cup granulated sugar (for cheesecake filling)
- 1 tbsp ground cinnamon
- 1/4 cup granulated sugar (for coating)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
- In a small bowl, mix cream cheese and sugar for the cheesecake filling.
- Scoop out dough, flatten, and add a teaspoon of cheesecake filling in the center.
- Seal edges and roll in cinnamon-sugar mixture.
- Place cookies on a lined baking sheet and bake for 10-12 minutes or until golden brown.
- Let cool before serving and enjoy!
Notes
Chilling the dough for 15 minutes makes handling easier. Store in an airtight container for up to 3 days.
