Churro Cheesecake Donut Cookies

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/4 cup granulated sugar (for cheesecake filling)
  • 1 tbsp ground cinnamon
  • 1/4 cup granulated sugar (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the egg and vanilla extract.
  5. Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
  6. In a small bowl, mix cream cheese and sugar for the cheesecake filling.
  7. Scoop out dough, flatten, and add a teaspoon of cheesecake filling in the center.
  8. Seal edges and roll in cinnamon-sugar mixture.
  9. Place cookies on a lined baking sheet and bake for 10-12 minutes or until golden brown.
  10. Let cool before serving and enjoy!

Notes

Chilling the dough for 15 minutes makes handling easier. Store in an airtight container for up to 3 days.
