- 125g / 4.5 oz dark cooking chocolate (70% cocoa)
- 10g / 0.3 oz unsalted butter
- 1/2 cup full-fat cream
- 3 tbsp caster sugar (superfine white sugar)

Instructions
- Melt Chocolate and Butter: Break the chocolate into pieces. Melt it with butter in a heatproof bowl over simmering water. Stir until smooth.
- Separate Eggs: Carefully separate the egg yolks from the whites. Set the whites aside.
- Mix Yolks and Sugar: Whisk the egg yolks and sugar until pale and creamy. Gently fold this into the melted chocolate mixture.
- Whip Cream and Egg Whites: In separate bowls, whip the cream until soft peaks form. Beat the egg whites until stiff peaks appear.
- Combine Everything: Fold the whipped cream into the chocolate mixture. Then, gently fold in the egg whites. Avoid overmixing.
- Chill and Set: Spoon the mousse into serving glasses. Chill in the fridge for at least 2 hours, or until set.
- Serve: Top with whipped cream, chocolate shavings, or fresh berries. Enjoy!
