Instructions
Make the Dough:
- Cream butter and sugar together until light and fluffy.
- Add vanilla and egg, beating well.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually combine the dry ingredients with the wet, stirring until fully mixed. Chill dough for 30 minutes.
Bake the Cookies:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Scoop dough into balls and place them on the baking sheet, spacing evenly.
- Bake for 8-10 minutes, until edges are firm.
- Let cookies cool completely before frosting.
Make the Frosting:
- Beat powdered sugar, butter, milk, and mint extract until fluffy.
- Add green food coloring (optional) and mix until evenly blended.
Make the Ganache:
- Melt chocolate chips with oil until smooth.
- Drizzle ganache over the frosted cookies and let it set.
Notes
- For extra chocolate flavor, try adding dark chocolate chunks into the dough or drizzling melted chocolate on top.
- If you need to make the recipe dairy-free, substitute coconut oil or dairy-free butter, and use dairy-free chocolate chips.
- Adjust the amount of mint extract based on how strong you like the mint flavor.
