What you’ll need
For the base:
• 1 cup crushed chocolate cookies
• 3 tbsp melted butter
For the cheesecake layer:
• 8 oz cream cheese (softened)
• ¼ cup sugar
• 1 tsp vanilla extract
• ½ cup heavy cream
For the cherry cola center:
• ½ cup cherry pie filling
• ¼ cup cola (reduced slightly for flavor)
• 1 tsp cornstarch (optional)
How it comes together
Mix the crushed cookies with melted butter and press into the bottom of small cups.
In a bowl, beat the cream cheese, sugar, and vanilla until smooth.
In another bowl, whip the heavy cream, then fold it gently into the cream cheese mixture.
In a small pan, warm the cherry filling with cola and cornstarch until slightly thickened, then let cool.
Layer the cheesecake mixture into the cups, add a spoon of cherry cola filling in the center, then top with more cream mixture.
Chill for at least 3–4 hours until set.
