- 2 cups cooked, shredded chicken (rotisserie chicken works great!)
- 8 oz cream cheese, softened
- 1/2 cup ranch dressing (or blue cheese dressing, if preferred)
- 1/2 cup Buffalo hot sauce (adjust to heat preference)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon ranch seasoning (optional for extra flavor)
- 1/4 cup green onions, chopped (for garnish)
- Tortilla chips, celery sticks, or carrot sticks (for serving)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the chicken: If you haven’t already cooked the chicken, shred rotisserie chicken or cook and shred about 2 cups of chicken.
- Mix the base: In a large mixing bowl, combine the softened cream cheese, ranch dressing, and Buffalo hot sauce. Stir until everything is well blended.
- Add the cheeses: Stir in the shredded cheddar and mozzarella cheese until fully incorporated.
- Combine with chicken: Add the shredded chicken to the cheese mixture and stir until the chicken is evenly coated.
- Bake the dip: Transfer the dip mixture into a baking dish (a 9×9 dish works well). Spread it out evenly.
- Bake for 20-25 minutes: Place the dip in the preheated oven and bake until the top is bubbly and golden brown.
- Garnish and serve: Remove the dip from the oven, top with chopped green onions, and serve with tortilla chips, celery sticks, or carrot sticks.
Notes
- Make it lighter: Swap out the cream cheese for light cream cheese or Greek yogurt to cut down on calories. You can also use a lower-fat ranch dressing or blue cheese dressing.
- Adjust the heat: If you like it spicier, increase the amount of Buffalo sauce or add a few dashes of hot sauce. For a milder version, reduce the amount of Buffalo sauce.
- Slow Cooker Option: You can also make this dip in a slow cooker! Combine all ingredients in the slow cooker and cook on low for 2-3 hours, stirring occasionally.
- Leftovers: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven until warm.
