Ingredients
Main Ingredients:
- Cherry tomatoes – 2 pints
- Feta cheese – 1 block (8 oz)
- Pasta – 12 oz (penne, fusilli, or preferred shape)
Seasonings & Flavor Enhancers:
- Garlic – 3 cloves, minced
- Red pepper flakes – 1 tsp (optional)
- Dried oregano – 1 tsp
- Salt & black pepper – To taste
Oils & Garnishes:
- Extra-virgin olive oil – 1/3 cup
- Fresh basil or parsley – For garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, mix cherry tomatoes, garlic, red pepper flakes, oregano, salt, and pepper.
- Place feta block in the center and drizzle everything with olive oil.
- Bake for 25-30 minutes until tomatoes burst and feta is golden.
- Cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
- Remove baking dish from the oven, mash feta and tomatoes into a creamy sauce.
- Add pasta and toss to coat. Adjust consistency with reserved pasta water if needed.
- Garnish with fresh basil or parsley and serve immediately.
Notes
- Use a block of feta in brine for better flavor and creaminess.
- Cook pasta al dente to hold up better in the sauce.
- For added freshness, top with extra basil or parsley before serving.
