Instructions
- Prep the Broccoli: Steam or boil the broccoli until tender but firm, about 3-4 minutes. Drain and cool, then chop or grate finely.
- Mix Ingredients: Combine broccoli, cheddar cheese, breadcrumbs, Parmesan, garlic, onion powder, smoked paprika, salt, and pepper in a bowl.
- Add Eggs: Stir in beaten eggs until the mixture is well coated.
- Shape Balls: Shape into 1-inch balls and place them on a lined baking sheet.
- Bake: Preheat oven to 400°F (200°C). Lightly spray or brush balls with oil, then bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
